Humble Feast dinner Monday - Stuffed Tomatoes recipe

Humble Feast dinner at Patty Pan restaurant on Labor Day Monday, September 4.

The special dinners are held the First Monday of each month, 5:30 to 7:30pm at Patty Pan's Neighborhood Kitchen: 15550 27th Ave NE, Shoreline 98155 in the Briarcrest neighborhood.

Price is $12/person (plus tax). For $10 (plus tax) discounted tickets, prepay via PayPal by 4pm on the day of the dinner. Kids half price.

This month's menu: Frittata with Leeks and Greens, Stuffed Tomatoes, Roasted Potato Salad with Bacon, Cucumber Salad, and Salted Melon Sorbet.

And here's owner Devra's recipe for the Stuffed Tomatoes.

Stuffed Tomatoes (makes 6 servings)

2 tablespoons olive oil
3 cloves garlic
2 tablespoons chopped fresh basil or parsley
1/2 teaspoon salt
1/4 cup bread crumbs
3 tablespoons parmesan cheese (optional)
3 ripe medium-size tomatoes, a bit underripe

Preheat the oven to 375F.

Heat the olive oil gently in a small saucepan. Add the garlic and cook for about a minute, until it's fragrant. Add the herbs and salt, cook for a minute longer, then add the breadcrumbs and cheese, if desired.

Slice the tomatoes about a third of an inch thick. Divide the garlic and breadcrumb mixture evenly among the tomato slices and spread in a thin layer.

Arrange the tomato slices on a baking sheet and bake for about 20 minutes, until the tops are crispy and golden brown.

The Shoreline Chamber of Commerce brought out its big scissors for the ribbon cutting for the new Ahipoki restaurant in Aurora Village. Chamber members were joined by City of Shoreline staff and Ahipoki owners and employees to cut the ribbon, following by a tour and tasting.

Ahipoki Bowl features fresh rice or salad bases, with line cut ahi tuna, diced salmon, albacore, spicy tuna, octopus, scallops, yellowtail and shrimp as the protein starters of their bowl. Guests then choose from several toppings like fresh cucumber, masago, ginger, roasted seaweed, green onions, daikon sprouts and more, all garnished with homemade sauces. In addition, Ahipoki offers specialty proteins such as Tuna Luau and Kimchi Shrimp.

"We are thrilled to open our first Washington restaurant and are eager to serve a fresh, healthy poke option in Shoreline", said Stefanie O'Neal, partner.

Ahipoki's grand opening is this Saturday, July 15, when bowls will be 50% off, all day long. Ahipoki is in Aurora Village in the location formerly occupied by Starbucks.

Devra Gartenstein, the Quirky Gourmet, is staging a Humble Feast dinner this coming Monday at her Patty Pan restaurant, 15550 27th Ave NE, Shoreline 98155, 5:30 - 7:30pm.


The full menu for Monday:

Stuffed Zucchini
Green Salad
White Beans with Garlic Scapes
Roasted Vegetable Pasta Salad
Berry Crisp

"Patty Pan's Humble Feast is a series of community-based dinner events featuring local ingredients sourced primarily from area farmers who are our friends and neighbors at the markets. But these dinners are also a practical attempt to answer the question: how can we eat well without busting our budgets?"

Advance tickets are $10 - $12 at the door.

Stuffed Zucchini (makes 6 servings) 

3 medium-size zucchini
1 tablespoon olive oil
½ pound ground beef or ½ pound cooked lentils
½ teaspoon salt, or more, to taste
Half an onion, diced
3 cloves garlic, minced
1 teaspoon dried basil or 1 tablespoon finely chopped basil
½ teaspoon dried oregano or 1 teaspoon fresh oregano
¼ cup chopped fresh tomato or canned crushed tomato
¼ cup grated cheese such as parmesan or feta (optional)

Preheat the oven to 375 degrees Fahrenheit.

Boil water in a medium-size stockpot. Cut the zucchini in half lengthwise, and then cut each half crosswise to make four pieces from each zucchini. Blanch the pieces in the boiling water for about a minute and then drain or remove them with tongs.

Heat the olive oil in a medium-size skillet. Add the ground beef and salt. Cook until lightly browned, about 5 minutes, and then add the onion, garlic, basil, and oregano. Cook for 5 to 10 minutes longer, until the onion is soft and translucent, and then add the tomato and cook for 5 to 10 minutes longer, until the mixture starts to thicken.

For the vegetarian version, heat the oil and then add the onion, garlic, basil, oregano and salt. Cook until the onion is soft, about 5 minutes, and then add the lentils and turn off the heat.

When the zucchini is cool enough to handle, gently scoop out as much of the flesh as you can without breaking the skin. Finely chop the pulp, and then add it to the beef or lentil mixture. Spoon this mixture into the zucchini shells, and top with grated cheese. Bake for about 10 minutes, until heated through.

Hawaiian restaurant to open in Aurora Village

Coming soon to Aurora Village - poke
Ahipoki, which opened the very first poke restaurant in Arizona in 2016, have announced their expansion plans to enter the Seattle restaurant scene with a location in Shoreline.

They expect to open this summer in the site formerly occupied by Starbucks in Aurora Village.

Poke is a Hawaiian based dish featuring diced sushi-grade fish like ahi tuna and salmon, garnished with vegetables and exotic toppings like daikon, and served over a bowl of rice - the quick serve industry’s hottest new concept.

The Ahipoki Bowl restaurant group, based in southern California, is at the forefront of developing the concept and has plans for multi-unit growth throughout the southwest and beyond.

The team of Stefanie O’Neal and Lars Gouwerok have partnered with Jason Jantzen and Michael Zimmerman, owners of Ahipoki Arizona, to develop the state of Washington.

“Although we have seen several poke restaurants pop up in Seattle lately, we’re confident that the Ahipoki concept will thrive. 
"Our brand stands apart based on our quality of food, upbeat atmosphere and thoughtful site selection." explained O'Neal. 

"The dining experience has evolved." explained Gouwerok, managing partner of Ahipoki. "People want easy and efficient, but don't want to sacrifice quality and experience. We found a way to incorporate all four aspects in a well-crafted healthy option."

Zimmerman, entrepreneur and investor, along with Jantzen who is also owner of Phoenix Marketing Associates, have spearheaded the growth of Ahipoki and are looking forward to expanding into other states.

The Ahipoki concept was born out of the desire of a restaurant group wanting to bring a much needed health-conscious California seafood restaurant with a south pacific flair to its customers.

Health conscious fish lovers can sit down and relax in a laid back atmosphere all while enjoying the fusion of Japanese and Hawaiian flavors coupled with a fresh fish experience normally found outside of a quick serve restaurant.

Asparagus with Mustard-Dill Sauce
Yield: 4 servings
I think about this recipe all winter, as I look forward to spring. It only takes 20 minutes to prepare.

1 quart water
1 pound asparagus, trimmed and cut in 2-inch lengths
1 to 2 tablespoons olive oil
2 to 3 cloves garlic, minced
1 tablespoon chopped fresh dill
1 teaspoon prepared yellow mustard (preferably seeded)
1/2 teaspoon salt
black pepper to taste
juice of 1/2 lemon

1. Boil the water in a medium-size saucepan and blanch the asparagus for about 15 seconds. Drain and run them under cold water for a minute.

2. Heat the oil in a small saucepan. Add the garlic and cook on low heat for a minute or two. Turn off the flame, add the dill, mustard, salt, pepper, and lemon, and mix well.

3. Toss the asparagus with the sauce, and let stand for 10 minutes before serving.

Note: If you bend the stem end of a stalk of asparagus, it will break at precisely the point where it's tender enough to eat. When working with a bunch of asparagus, you don't have to bend every piece individually. Just do one or two, and that will give you an idea of where to cut the rest.

Many thanks to Streetzeria for hosting the Benefit Dinner on March 13 in celebration of the restaurant’s three-year anniversary. Owner Greg Bye's son, Reilly, ran the event and was gracious, welcoming and efficient in making sure everything ran smoothly for a successful event. His father should be proud of him and his staff! RBCA board members helped greet and serve guests.

Reilly Kemp-Bye and Jade Mitchell produced a variety of pizzas in Streetzeria's kitchen.

The evening’s proceeds were donated to the Richmond Beach Community Association to support all the wonderful events and services they provide for the community. Approximately 150 people came to enjoy the scrumptious buffet of salad and pizza and the companionship of friends and neighbors. A special thank you to all who attended and contributed!

During the summer they expand outside

The Patty Pan Cooperative has become the heart of the Briarcrest Neighborhood. Residents know and now Patty Pan has been discovered by The Seattle Times's Pacific Magazine.

The interior is homey and comfortable
“HONOR THE FARMERS!” read the chalkboard at the five-course feast made from locally grown, seasonal ingredients. Sweet red peppers, roasting in the ovens, made the kitchen smell like harvest season. 
With the ingredients list, cooks Devra Gartenstein and Tamara Guyton could have been preparing for any high-end regional dinner: flour milled by Nash’s Organic Produce in Sequim from grains grown in nearby fields, beef from cows raised on sustainable pastures at Winthrop’s Crown S Ranch. 
The goal, though, wasn’t glamour. This was The Humble Feast, a monthly community meal prepared by the Patty Pan Cooperative in Shoreline. Ticket prices were $10 in advance for adults, $5 for kids (yes; kids are welcome). At the door, it was $12 and $6, still closer to fast-food prices than standard farm-to-table celebrations.

The Sultan Gyro and Shawarma Grill is now open for business at 175th and Aurora, offering food from the eastern Mediterranean. 

Hummus, falafel, gyros, shawarmas, vegetables, and dinner platters with combinations of all of those.

You can eat in - there are half a dozen small tables and counter space. Or you can order to go. The days I was there, I saw a steady stream of people dropping in to pick up food to go.

They are open for lunch and dinner.

This is a family business. The original restaurant is still open in the U District.

Mohammad Almuti is owner and chef for the Shoreline location.

I had the Arabic shawarma in a wrap and my husband had the Gyro dish platter. We loved both items.

Here's why I don't usually write restaurant reviews: we went in a second time and had exactly what we had the first time! It was too good to pass up.

The popular Leena's Cafe in North City is closed this week for major remodeling.

Leena says that the wallpaper is up and the booths go in Thursday.

She expects to reopen on Saturday morning.

The cafe was remodeled last year after a fire damaged the interior.

When an Outdoors reporter (Mark Yuasa of The Seattle Times) writes a restaurant review, you know it's love. These are not the kind of sandwiches you pack on a hiking trip.

"Grinders Hot Sands in Shoreline ... has raised the bar on what a sandwich should be 
"The first thing you’ll notice at Grinders is its signature lightly toasted, yet very soft Italian roll or the warm, thick ciabatta bread. 
"While the bread sets the tone, don’t overlook what you’ll find inside. Each sandwich is layered with meat, vegetables and cheese; many contain its signature caramelized onions."

This answers the question about what would happen to Grinders under new ownership - apparently only good things.

On May 8, otherwise known as Mother’s Day, the Lake Forest Park Farmers Market opens for its 12th season. Bringing together farmers from around the state and many local food processors, who source their materials locally, we celebrate community and sustainability every week through the summer season!

This season, we are opening the market with a couple treats. First, we have invited several local garden artists to join us for the spring. From yard art like blooming glass flowers to cedar planter boxes and so much more, there are plenty of beautiful treats to take home with your fresh veggies. Second, we have invited 10 local Food Trucks to join us for a Opening Day extravaganza!

Our Food Truck lineup includes Buns on Wheels, Nosh, Chopstix, Gzi Box, Jemil’s Big Easy, Hot Revolution Donuts, Taco La Flaca and many more! Stop by and enjoy breakfast treat, lunch or dinner with them while you shop at the market. In honor of Mother’s Day, the Food Trucks will stay after the market ends.

For those of you who love our market, we welcome back some of our favorite vendors on opening day including Wilson Fish, Garden Treasures, Bautista Farm, Collins Family Orchards, Firefly Fermented Veggies, Blue Cottage Jams, Pete’s Perfect Toffee, Doll House Baked Goods, Cha New Life, five wonderful flower vendors making bouquets special for Mothers Day, plus so many more! 

Finally, if you don’t feel like eating at a food truck, check out our regular ready to eat vendors Drummin’ Up Wontons, Patty Pan, Seattle Pops, Kettle Corn, and too many to list here.
