Shorewood culinary arts teacher Diana Dillard and SW alumnus Zack Lake were featured on the Q13 Fox Morning show on Wednesday.
Here's the clip from the show.
Zack began working at Salty's at Alki having met the chef at a Shorewood chef dinner. Today, he still works at Salty's and the Seattle Tennis Club as well.

Shoreline Culinary Arts guest chef dinner with Chef Seth Prigg of Ray's Boathouse

The professional chefs who support the culinary arts training program at Shorewood High School put on a series of dinners during the school year. The guest chef is in charge and students from the program assist and learn. Guests get a terrific dinner and support the program all at the same time.
The first dinner of the year is Thursday, December 8, with Chef Seth Prigg of Ray's Boathouse. Dinners are prepared and served at Shorewood.

The 2nd Annual Shorewood Harvest Dinner was a resounding success. The fundraising dinner took place on August 27, 2011 at the beautiful private home of Le Panier Bakery owner Kristi Drake, in the Innis Arden neighborhood of Shoreline.
The weather could not have been better for the guests to enjoy the fantastic five course sit-down dinner which featured some of the top chefs in the Seattle area:
- Holly Smith of Cafe Juanita,
- Susan Kaplan of The Boat Street Cafe and Kitchen,
- Tyler Moritz of La Bete,
- Brock Johnson of Dahlia Lounge and
- Brian Scheehser of Trellis.

The near capacity crowd enjoyed cocktails made with donated organic vodka and appetizers made at the Culinary Arts kitchen, while the Shorewood String Quintet played on the lawn.
The guests (which included quite a number of Master Gardeners) enjoyed local wines with each course which was introduced by each chef.
A small silent auction took place during the cocktail hour.

Most of the food products, produce, meats, poultry and seafood, wines and liquor were kindly donated by local businesses who are supportive of this wonderful collaboration: The Shorewood High School Culinary Arts Program and the Shorewood High School Culinary Arts Garden-A Youth Education Garden sponsored by the Master Gardener Foundation of King County and WSU Extension.
Plans are already under way for next year's event. Don't miss it.

Public demonstrations on the preparation, filleting and handling of Copper River salmon will be presented in Shoreline when this year’s first catch of the renowned fish arrives Tuesday, May 17, 2011.
Opening day for the Copper River salmon season in Alaska is Monday, May 16. A portion of the catch from the first shipment to arrive Tuesday morning at Seattle-Tacoma International Airport will be rushed to TOP Food and Drug in Shoreline, where Senior Executive Chef Jeremy Anderson of Elliott’s Oyster House will present demonstrations from 9 am to noon.

Anderson will be preparing Pepper Vodka Cured Lox Salmon and Barbecued Bourbon Salmon with Tomatillo Salsa. He also will offer tips on filleting salmon and answer questions. Anderson joined Elliott’s Oyster House in Seattle as executive chef in 2003. He has 20 years of experience in the restaurant business and graduated with honors from the Culinary Institute of America in New York.

Copper River salmon are eagerly anticipated each year. Their bright red flesh, firm texture and rich flavor lead to delicious dining experiences. Also, these salmon must store more fat and oils than other salmon in order to survive a 300-mile venture up the Copper River. As a result, Copper River salmon have high levels of Omega-3 fatty acids that can help reduce heart disease and lower cholesterol.

The Shorewood Harvest Dinner held on September 10 at a private home in Innis Arden was, according to Master Gardener Scott Francis "...a total success! We have already been asked when next year's tickets will be available!"
Professional chefs Maria Hines of Tilth, Holly Smith of Café Juanita, John Sundstrom of Lark, Jerry Traunfeld of Poppy, and Dana Tough and Brian McCracken of Spur Gastropub and Tavern Law worked alongside Shorewood Culinary Arts students to prepare a multi-course dinner featuring local produce, including produce from the school's culinary arts garden.
Scott Francis said "We have decided to make this an annual event. The chefs and the guests, alike, had a very enjoyable evening. Both the Shorewood High School Culinary Arts Program and the Master Gardener-sponsored Shorewood Culinary Arts Garden will benefit greatly from this fantastic event!"

Six Seattle chefs are putting the "fun" in fundraiser, lending a hand to high schoolers at the Shorewood Culinary Arts program by preparing a special Harvest Dinner Friday, September 10. Taking part are some of the best in the business:
The event begins at 6 p.m. with cocktails at a private home in Shoreline's Innis Arden neighborhood, where the high-profile chefs will prepare an intimate dinner for 50. Proceeds from the a multi-course meal fund the high school's long-running culinary arts program and a major expansion of its Master Gardener's Youth Education Garden located on the Shorewood campus. At $200 per person, the price may sound steep, but considering the talent on hand and the cause that inspired them to be there, it's a ticket worth securing -- via the King County Master Gardener Foundation Web site, here.

The Shorewood High School Culinary Arts Program and The Culinary Arts Garden sponsored by Washington State University Extension/Master Gardener Foundation of King County will be presenting a special Harvest Dinner on Friday evening, September 10, 2010 - and you can be there.
This special fundraising dinner will take place in a beautiful private home in the Innis Arden neighborhood of Shoreline. Seating is limited to 50 people. The price per ticket is $200 which includes cocktails, wine and beer. The event will begin at 6:00 pm.
The multicourse dinner will be prepared by some of the Top Chefs in the Seattle area:

Shorewood student featured on KCTS/9 cooking show

Sammantha Simmons, a culinary arts student at Shorewood High School, was featured in a recent "KCTS Cooks" program on Channel 9, demonstrating her Eggplant and Feta Dip recipe. The dish was created as part of her final culinary arts project in teacher Diana Dillard's class.

Eggplant Feta Dip
Yield: 4 servings, 1/2 cup each
Ingredients:
1 Small Eggplant, about 14 ounces
2 tsp. Fresh Lemon Juice
2 Tbs. Extra-Virgin Olive Oil
1/3 cup Crumbled Feta Cheese
2 Tbs. Finely Chopped Red Onion
1 Small Jalapeno, seeded and minced
1 Small Red Bell Pepper, chopped finely
1 Tbs. Basil, finely chopped
1 tsp. Chopped Flat-Leaf Parsley
1/2 tsp. Kosher Salt
1/2 tsp. Sugar (optional)
Cayenne Pepper to taste
Method:
1. Position oven rack about 6 inches from heat source; preheat broiler.
2. Line a half sheet pan with foil. Place eggplant on pan and poke a few holes all over it to vent steam.
3. Broil the eggplant, turning with tongs every 5 minutes, until the skin is charred and a knife inserted into the dense flesh near the stem goes through easily, about 14-18 minutes.
4. Transfer to a cutting board until cool enough to handle.
5. Put lemon juice in a medium bowl. Cut eggplant in half lengthwise and scrape flesh into bowl, tossing with the lemon juice to prevent discoloring.
6. Add oil and stir with a fork until oil is absorbed. (It should be a little chunky.)
7. Stir in feta, onion, jalapeno, pepper, basil, parsley, cayenne, and salt. Taste and add sugar if desired.

The Shorewood High School Culinary Arts Garden is located at the southwest corner of Shorewood High School on Fremont Ave N and NW 170th St. The garden is developed and managed by the King County Master Gardener Foundation in conjunction with the Washington State University Extension Program.
The mission of the Shorewood High School Culinary Arts Garden is to inspire and teach the students of the Culinary Arts classes where and how the food they use in their classroom is produced, and to mentor them in becoming good stewards of their environment. The garden is also being developed as a demonstration garden for the community as well.
King County Master Gardeners were asked to help with the garden in 2007. In cooperation with the head of the program and instructor, Mrs. Diana Dillard, the Master Gardeners work with the students to grow herbs and vegetables. We also give mini lectures on various horticultural techniques such as planting methods, propagating, pruning and composting.

The garden is expanding to an area between the parking lot and the public sidewalk. We are building raised beds with donated lumber so that more vegetables can be grown. The existing garden is too shaded to grow many vegetables well. This new area will be in full sun and we will grow a great deal more produce. Since this is an organic garden, we are adding a wildlife habitat to bring in pollinators and birds to help with better crops and pest control.
Community members are invited to stop by and see the Garden. If the Master Gardeners are at the garden when you come by we can answer your gardening questions as well.
