Maple Ancho-Roasted Delicata Squash

The fall vibes are strong with this warm and comforting recipe from Town and Country Market 

Maple Ancho-Roasted Delicata Squash

Sweet and smoky go so well together in this simple side dish. Roasting at a high temperature ensures good caramelization for amazing flavor.

Difficulty Level: Easy

Prep Time: 15 Minutes
Cook Time: 30 Minutes
Yield: 4 Servings

INGREDIENTS

1 large or 2 small delicata squash
½ cup pure maple syrup
3 tablespoons olive oil
1 tablespoon ancho chile powder
Salt and freshly ground black pepper½ cup roasted, salted pepitas (pumpkin seeds)

PREPARATION

STEP 1
Preheat oven to 425°F. Line a baking sheet with parchment paper or a reusable silicone mat. Do not use foil.

STEP 2
Cut squash in half lengthwise, cut off ends and scoop out seeds (no need to peel). Cut each half crosswise in 1/2-inch thick half-moons.

STEP 3
In a medium bowl, combine maple syrup, olive oil and chile powder. Add squash and toss to coat. Place squash in a single layer on the prepared baking sheet. Season generously with salt and pepper.

STEP 4
Roast until browned, about 15 minutes. Remove from oven, flip squash over and cook another 10 minutes.

STEP 5
Transfer to a platter and garnish with roasted salted pepitas.

OPTIONS
Try curry powder, Harissa powder, or any of T/C's spicy or smoky spice blends from bulk foods in place of the chile powder. This recipe will also work with sweet potatoes or other winter squash (the skin will not be edible). Cooking times will vary.

Our friends to the north, MyEdmondsNews.com have a fascinating historical article The story of Edmonds’ forgotten Starbucks by Brad Holden.

It was located in Old Milltown, a small shopping center in the heart of Edmonds that has been gone so long that I forget it existed.

I loved the place and went there often. I bought coffee at the coffee shop when the Starbucks name meant nothing. It was full of attractive small shops, historical photos, and a huge mill wheel. The wooden floors were uneven and creaky.

Slowly the shops closed and were not replaced. Finally the entire building was torn down. The lower level with shops accessible from the outside, still exists.

Dr. Tim C. Norton was the recipient of the “Researcher of the Year Award” at the 45th Annual Chiropractic Biophysics (CBP) Research Conference held in Dallas TX over the weekend. 

Dr. Norton was awarded this high honor for his contributions to spinal rehabilitation research. 

Chiropractic Biophysics (CBP) is the most published and researched chiropractic technique in the world with over 300+ peer reviewed medically indexed research papers.

Dr. Norton has been involved with many projects with the CBP research group and is the lead author on multiple papers, primarily focusing on pediatrics and auto injury spinal rehabilitation.

The award was presented by Dr. Deed Harrison, President of CBP Nonprofit research group

Dr. Tim C. Norton is the owner and clinic director for Health Chiropractic and Massage in Shoreline. He is an Instructor for and Advanced Certified in the Chiropractic Biophysics (CBP) Technique. 

He is a past president of the Shoreline Chamber of Commerce, sits on the Board of Directors for CBP Nonprofit Research group as Treasurer, and is a member of the Washington State Chiropractic Association and the International Chiropractic Associations.

Mini Baked Frittatas

Difficulty Level: Easy
Prep Time: 15 Minutes
Cook Time: 20 Minutes
Yield: 12 Servings

INGREDIENTS

12 eggs
¼ cup milk
Salt and pepper

Optional additions:
  • Shredded cheese
  • Spinach
  • Diced onion
  • Diced peppers
  • Cooked sausage
  • Cooked crumbled bacon
  • Diced ham
  • Chopped broccoli
  • Diced tomatoes
  • Sliced Mushrooms
  • Fresh herbs
  • Hashbrowns or diced cooked potato

PREPARATION


STEP 1
Preheat oven to 350°F. Coat a standard 12 cup muffin tin with cooking spray.

STEP 2
In a medium bowl (or large measuring cup for easy pouring) beat eggs with milk, salt, and pepper.

STEP 3
Prepare toppings of choice and add to muffin cups. Fill each cup about halfway.

STEP 4
Pour egg mixture into muffin cups over fillings until almost full. Give them a little room to expand.

STEP 5
Bake for 15-20 minutes. Frittatas will puff up slightly when cooked. Eat warm or chilled.

WA treasurer joins call for FTC to oppose supermarket merger

Washington state Treasurer Mike Pellicciotti and six other state treasurers are urging federal regulators to oppose a merger of the nation’s two largest grocery store chains.

The seven state officials sent a letter Wednesday to the Federal Trade Commission warning of “significant adverse effects” if Kroger, the nation’s largest supermarket chain, is allowed to acquire Albertsons, the second largest, for $24.6 billion.

The letter raises concerns about lower pay for store employees, the potential for layoffs, reduced ability for workers to organize and negotiate on working conditions, and consolidation and store closures leaving communities with fewer or no shopping options.

“Corporate consolidation at this scale is bad for workers and consumers,” Pellicciotti, a Democrat, said in an email Thursday. “The tradeoff of narrow, short-term corporate profits at the expense of long-term impacts to wages and consumer costs only furthers the unsustainable imbalance of economic power.”

A primary concern raised in the letter is a reduction in wages for workers.

The treasurers cite an analysis by The Economic Policy Institute, a nonprofit left-of-center think tank, that concluded the merger could result in a total loss of $334 million in wages for 746,000 grocery store workers in more than 50 metropolitan areas. This works out to an average annual loss of about $450 per worker, the report says.

“We believe that the interests of our constituents and the long-term economic security of our states would be better served by opposing this merger,” the treasurers wrote.

Along with Pellicciotti, the letter was signed by the treasurers of Colorado, Delaware, Maine, Massachusetts, Nevada and New Mexico.

The acquisition, announced in October, is staunchly opposed by the United Food and Commercial Workers International Union which represents 100,000 Kroger and Albertsons workers.

Banchero Friends annual golf tournament to support independent living for developmentally disabled clients

Annual golf tournament to benefit Banchero Friends
will take place August 30 in Newcastle
On August 30th, Cedar Grove Composting will host their annual golf tournament at China Creek Course at Newcastle to raise funds for Banchero Disability Partners as they continue to provide independent living services for its thirty-six developmentally disabled clients and their families.

Banchero Disability Partners (BDP) has been an integral part of the Shoreline area service providers for individuals with intellectual and developmental disabilities since 1971. 

This annual golf tournament provides an annual opportunity to reacquaint the local community with the supported living services they provide to their constituents. 

Since its last tournament, prior to the pandemic, BDP has added nearly a dozen clients and completed a campaign to own and occupy a second set of apartments in the Shoreline area. 

The expansion of services to more individuals and their families has brought with it extra demands to hire staff and create new programs. 

“Our amazing staff builds the skill sets of our clients so they can live happily, independently, and safely integrated into their local communities. Funding living wages to attract competent staff to support our clients 24/7 is our priority” says Carol Salter, Executive Director of BDP. 
“The golf tournament, sponsored by Cedar Grove Composting is a great way for us to work with the community and share the amazing stories we experience every day.”

Banchero Disability Partners owns and operates two apartment buildings in North Seattle and Shoreline, renting apartments to many individuals they serve, as well as to other low-income neurotypical individuals, migrants, and refugees, serving the greater Shoreline community. 

Recently, the City of Shoreline granted them a “Love your Community” grant funding BDP’s annual summer picnic at Paramount School Park on July 23, 2023. 

The Community Integration celebration was attended by approximately 100 individuals, including clients and their staff, family/guardians, and members of BDP’s Board of Directors.

Salter acknowledges “Cedar Grove Composting has been our longest and most generous supporter for over forty years. We are proud to be the non-profit organization they have elected as their focus and look forward to their charity event this month.” 

The Cedar Grove Composting Golf Tournament benefiting Banchero Disability Partners is August 30th at 11am at the China Creek Golf Course in Newcastle with all proceeds benefiting BDP clients. 

Dinner and a small silent auction will follow the tournament and are included in the registration fee. The entry fee is set at $200 for an individual, $750 for a team of four, and an opportunity to advertise your business as a hole sponsor for $1,000.

Merlone Geier Partners have announced that three new offerings are slated to open as early as this fall at Shoreline Place, Westminster Way and Aurora.

They have signed leases with Big Chicken, MOD Pizza, and Pet Evolution.

“Despite uncertainty over the past few years, we are thrilled to be completing construction on our new retail buildings and to bring these popular offerings to Shoreline,” said Jamas Gwilliam, Managing Director at Merlone Geier Partners.

Lemon Ricotta Berry Pancakes


Summer is the season of picking fresh berries and lazy mornings having breakfast as a family. These lemon ricotta pancakes are the perfect centerpiece to savor our favorite berry and fill our empty tummies.

Difficulty Level: Intermediate
Prep Time: 15 Minutes
Cook Time: 15 Minutes
Yield: 4-6 Servings

INGREDIENTS

1 cup all-purpose flour
½ cup whole wheat or oat flour
½ teaspoon baking soda
2 teaspoons baking powder
¼ teaspoon salt
1 cup milk
2 eggs
1 teaspoon vanilla
½ cup ricotta cheese (or Greek yogurt or cottage cheese)
2 tablespoons melted butter
2 tablespoons maple syrup
1 tablespoon grated lemon zest
2 tablespoons lemon juice
1 cup blueberriesButter and maple syrup for serving

PREPARATION

STEP 1
In one bowl mix together flours, baking soda, baking powder, and salt.

STEP 2
In another bowl mix milk, eggs, vanilla, ricotta, melted butter, maple syrup, lemon zest and lemon juice.

STEP 3
Mix dry ingredients with wet ingredients until just incorporated, but don’t over mix. Fold in blueberries.

STEP 4
Heat a griddle to medium heat. Butter or coat with cooking spray. Pour batter into pancakes of desired size. Do not flip until bubbles appear on top of pancakes. About 2-3 minutes. Pancakes should be puffed and golden brown on both sides when ready. Cook in batches to use all of the batter.

STEP 5
Serve warm with butter and maple syrup.

OPTIONS

These pancakes can be made with any favorite berry, fresh or frozen. Raspberries, blackberries, or chopped strawberries are also delicious.

AG Ferguson wins up to $695,000 in refunds for Washingtonians harmed by lingerie company’s deceptive subscriptions practices

OLYMPIA — Attorney General Bob Ferguson announced today a national online apparel company will return as much as $695,000 to approximately 5,700 Washingtonians it deceptively enrolled into a monthly subscription service.

From 2012 through 2017, Adore Me, a national company that sells lingerie and other women’s clothes online, placed a pre-checked box on all its online orders that enrolled Washingtonians into a monthly “VIP Membership.” 

Individuals who did not notice the pre-checked box, especially those who made a one-time purchase, may not have known that the company automatically enrolled them into a membership program that charged them monthly fees.

The company continued to charge many individuals $39.95 per month for the “VIP Membership,” which it put into their accounts to use for future purchases. 

However, many Washingtonians did not know this money went into an account and accrued during the course of many months. 

If individuals asked for their money back, Adore Me made it difficult to receive any money back. Ferguson asserted Adore Me’s conduct violated the state’s Consumer Protection Act and constituted unfair or deceptive business practices.

“Deceiving Washingtonians into subscriptions they don’t want cheats the consumer and hurts other businesses that play by the rules,” Ferguson said. “I am committed to ending these schemes. If this happened to you, contact my office so we can help.”

A court order filed in Thurston County Superior Court requires Adore Me to pay restitution to Washingtonians who accumulated monthly fees in their accounts and want that credit back as cash. 

Washingtonians can either opt for a cash payout or use the money to purchase apparel from the retailer. 

The Attorney General’s Office will contact Washington consumers who may be eligible for restitution via email. As part of the conditions of the legally enforceable order, Adore Me must:
  • Clearly and conspicuously disclose all fees, costs, conditions, limitations and restrictions applicable to the VIP Membership program so consumers can make an informed decision for enrollment;
  • Promptly honor consumer cancellation requests;
  • Abandon all practices requiring a consumer to complete an online quiz or survey in order to cancel their VIP Membership program, and not make more than one attempt to keep them enrolled once a consumer has indicated an intent to cancel; and
  • Cease the billing of recurring charges to any consumers enrolled in the VIP Membership program who have accumulated 12 months of store credit via recurring charges.

Adore Me still offers this VIP Membership but it now has greater transparency for the terms of the program, following a 2017 resolution with the Federal Trade Commission. 

The commission asserted the company made it hard to cancel memberships, including by limiting how consumers could submit cancellation requests, understaffing its customer service department and putting consumers through drawn-out cancellation processes.

In January, national apparel retailer Victoria’s Secret took ownership of Adore Me.

The Attorney General’s Office responds to every consumer complaint. It fields approximately 24,000 complaints annually, and returns tens of millions of dollars per year to consumers through its informal complaint resolution process, which involves working with businesses to resolve consumer complaints pre-investigation or litigation.

Biodegradable soap needs soil to break down - don't wash your vehicles on pavement

Biodegradable soap sounds safe, but it needs soil in order to break down. 

When biodegradable car wash soap flows into the street and storm drains, it harms fish and other aquatic life in our streams. 

Use a commercial car wash such as Brown Bear to keep soap, grease, and dirt out of our streams. 

There is a full service Brown Bear in Shoreline at 16032 Aurora Ave N, with a tunnel wash and a self-service car wash. 

All the water is recycled and none of the soap goes in the drain.

Brown Bear is a local company that gives back to the community.

Shoreline gets its own coffee blend at Town and Country Market

Town and Country Markets just announced the launch of its new EveryDay Coffee line with special blends chosen by employees to represent each of its six market locations!

T/C’s EveryDay coffee is fresh, organic, roasted to order in small batches, and ethically and sustainably sourced. Each market’s staff selected their favorite blend of beans to represent the neighborhood so customers can sip like locals. Available in whole bean or pre-ground, each flavor profile stands out among Seattle’s coffee-loving population.

At T/C's employee summit, team members played a key role in selecting the beans, roast and flavor profiles for the company's six coffee varieties. 

Starting with 16 different brands, employees helped narrow down the list to four potential vendors based on various criteria. Internal coffee experts and enthusiasts then evaluated the remaining suppliers, ultimately selecting two based on their high-quality product, attributes, and programs. 

The two versions were then tested in each market, with employees voting to determine the final selection for their market's coffee, also considering sales and customer preference for the roasts.

“We’re thrilled to continue connecting our employees to the EveryDay line, garnering their input and taste preference for the release of the coffee blends,” said Susan Allen, director of Town and Country Markets. 
“The new blends also celebrate our communities, paying homage to each with its unique flavor profile based on local preference. I’m grateful to the team and our partner for playing a crucial role in making these varieties so special.”

The debut of the EveryDay coffee follows the release of T/C’s EveryDay Eggs, Milk (in cartons designed by employees), Honey, and Maple Syrup.

Retired North Seattle teacher receives free wheelchair ramp on Mother’s Day weekend

Recipient Kathleen thanks the Irons Brothers crew who built her new ramp

Ramp Captain Joseph Irons, President of Irons Brothers Construction in Shoreline, and his team of employees and skilled volunteers built a free wheelchair access-ramp for a local Lake City resident. 

Joseph, along with his team, began their work in April by designing, planning, and coordinating the recipient’s new concrete walkway. 

Construction of a walkway / ramp as a part of a one-day philanthropy build is not an easy task, and a lot of time and pre-planning is required.
 
May 13, 2023, beginning at 7:30am, 18 volunteers from Irons Brothers Construction’s team began excavating, digging, and removing concrete and dirt.

Their team of family, friends, employees, and trade partners formed and poured a new landing and walkway. 

The new broom-finished concrete walkway is now barrier-free and looks great too!

This philanthropic project is a part of the Master Builders of King -Snohomish Counties (MBAKS) Rampathon program, celebrating its 30th anniversary. 

This is Irons Brothers Construction’s 17th annual Rampathon build.

This year’s ramp recipient Kathleen has five children and several grandkids who visit her frequently. 

With the new ramp, venturing out of the house will be easier with her scooter. 

Kathleen’s daughter told Joseph and Melissa that the gift of the new walkway on Mother’s Day weekend means the world to her Mom and their family. 

They are looking forward to upcoming summer gatherings where Kathleen can join them without having any obstacles to overcome.

Kathleen’s new ramp was built by removing the two sets of stairs at either end of her existing concrete walkway. 

She uses this walkway to get from her front door to the yard and out to the street where her car is parked.

Now without stairs to maneuver, Kathleen will have safe access and newfound independence. 

This project was constructed out of easy to maintain and eye-pleasing concrete materials.

Irons Brothers Construction maintains the highest commitment to philanthropy and giving back to our local communities where we live and work. At the end of the day, the reward is when Kathleen safely used her walkway - ramp to be outdoors.

Throughout April, May, June, and July, Kathleen, along with many other families throughout King and Snohomish Counties will be the recipients of a free wheelchair ramp built as part of the Master Builders Association’s Rampathon Event.

2023 marks 30 years of the annual Rampathon event. Since 1993, Master Builders members have contributed more than 500 ramps to members of our King and Snohomish County communities. 

Thanks to the Master Builders Association and the generous donors listed below, this ramp was built at no cost to the recipient. We believe our neighbors in need deserve the same freedoms we have. Wheelchair access ramps are their link to our beautiful community we all share.

Joseph and Melissa Irons, along with an army of staff and volunteers are passionate about helping others in their community. With almost two decades of involvement in Rampathon®, as well as other events sponsored by the Master Builders Association, Irons Brothers Construction is a wonderful example of dedicated builders giving back to the neighborhoods they serve.

What’s it all about
Pay tribute to some of your favorite bands while drinking some of the best beer north Seattle has to offer at Hellbent’s 8th Anniversary: The Tribute Party, Saturday, June 10th. 

You know how we like to do it over at Hellbent, we “Can’t Stop” making mouth-watering, hop-forward brews and we’re going all out for our 8th Anniversary IPA - our personal homage to the west coast style IPA. 

We invite you to “Come as You Are” and rock out to 3 bands paying tribute to Bruce Springsteen (1-3pm), Nirvana (3:30-5:30pm), and the Red Hot Chili Peppers (6-9pm). 

We’ll be closing off the parking lot for an extended beer garden featuring a satellite bar, and three food trucks: Tacos and Beer, Oskars Pizza, and Impeckable Chicken. Great music? Great Food? Great beer? We’ll be “Dancing in the Dark” before you know it. No cover. 21+.

3:30-5:30pm - Nevermind: Seattle’s Tribute to Nirvana

“Nevermind is a Seattle based rock and roll trio that pays tribute to legendary rock band, Nirvana. Born in the heart of Seattle in the old Studio 7 rehearsal spaces they have taken the region by storm by selling out venues with a singer that can shred the mic and guitar, a 6'8" rock bass legend, and a drummer that would make Dave Grohl blush, Nevermind is able to deliver the powerful and energetic performance that captures the sonic energy of Nirvana. 6-9pm - Readymade: Chili Peppers Tribute

“Est. 2020, Readymade is The PNW's #1 tribute to the music of the Red Hot Chili Peppers.
The band's three seasoned instrumentalists are Nate Bushmaker (A Band Called Celia), Zak Melang (Supersonic Soul Pimps), and Chase Culp (Point One) playing the parts of "John Frusciante", "Flea", and "Chad Smith", respectively. Readymade found their free spirited "Anthony Kiedis" when a mutual friend spotted Derek Sepesy crushing "the Zephyr Song" at weeknight karaoke! Readymade is dedicated to recreating the look, sound and ecstatic live energy of the iconic California rockers to the PNW with every performance!”

Comics and Cosplay at Shoreline Library for comic book fans

Browsers check out the offerings at Shoreline Library comic book day

According to Popverse.com, Free Comic Book Day was the brainchild of retailer Joe Field in 2001, inspired by Baskin-Robbins’ “Free Scoop Night” promotional efforts at his local ice cream parlor.

Darth Vader and R2D2 had a brief skirmish at the library

The first FCBD took place the next year, giving away more than two million comic books from just four publishers. It was such a success that it quickly became an annual event.

Time for a photo op with Captain America at the Shoreline Library

It is held the first Saturday in May, this year on May 6, 2023, at participating libraries and stores. Locally, the Shoreline Library and Arcane Comics in Shoreline can be counted on to participate.

Comic book day brings some interesting patrons to the library

The Shoreline Library welcomes cosplayers for the event, delighting fans and all library patrons with appearances by R2D2, Storm Troopers, and other characters.

Boxes of comics at Arcane Comics stretched across two storefronts

Arcane Comics, with less interior space than the library, put their offerings in a long row of boxes in front of the store so shoppers could browse at will.

Of course they have the distinct advantage of being open year-round! They are located in Parkwood Plaza at 15202 Aurora Ave N, Shoreline WA 98133, across the street from Jersey's Great Food and Spirits.
