New feature: Town and Country recipes - this month an international flavor trip with Peruvian Style Roast Chicken

Shoreline is fortunate to have two locally owned grocery stores. Town and Country Market, formerly known as Central Market, is located at 15505 Westminster Way N.Shoreline, WA 98133. Open from 7am to 10pm they have a seafood market, a deli, pizzeria, an Asian grocery section, bulk foods, fresh produce and so much more!

New to the Shoreline Area News, Town and Country will be providing a monthly recipe column. 

Peruvian style roast chicken
May's recipe:

Peruvian Style Roast Chicken

Intro: Inspired by Peruvian flavors, the herbs, spices, beer and lime in the marinade deliver loads of flavor while keeping your chicken tender and juicy. Marinate 6 to 24 hours.

Prep time: 20 Minutes
Cook time: 1 Hr 30 Min
Yield: 2-4 Servings

Ingredients:

¼ cup extra-virgin olive oil
½ cup lime juice
½ cup beer
6 garlic cloves, minced
2 tablespoons kosher salt
2 teaspoons hot paprika
2 teaspoons black pepper
1 tablespoon cumin
2 teaspoons dried oregano
2 tablespoons minced fresh mint
1 tablespoon sugar1 whole chicken (3-4 pounds or chicken pieces)

Instructions:

STEP 1
Combine all the ingredients except chicken in a blender or food processor and blend until completely smooth. Spoon marinade over chicken, spreading under the skin and inside the bird. Cover and refrigerate at least 6 hours or overnight.

STEP 2
Heat oven to 425˚F. Place chicken on a rack in an oven-safe pan. Roast for 20 minutes.

STEP 3
Reduce oven temperature to 375˚F and roast for another hour, or until chicken is cooked to an internal temperature of 165˚F and nicely browned.

STEP 4
Remove from oven, cover loosely with foil and let rest 10-15 minutes before carving.

OPTIONS
Perfect pairings for this chicken include Aji Verde (Peruvian green sauce), rice, and/or fried plantains.

Extra info:

The first stop on our international flavor trip is to Peru with this South American inspired chicken recipe.

The recipe can be made with a whole chicken or bone in skin on chicken pieces. Both are available in our meat department.

The bulk foods department is a great place to buy your dry spices. Not only is it a cost saver, but it also ensures your spices stay fresh because you can buy as little or as much as you want. While stopping by bulk foods for your spices also grab some rice to serve alongside your chicken.

There are three different categories of paprika. Regular paprika, the mildest in flavor and best used as a garnish. Hungarian paprika, consisting of different types, but all tend to be primarily sweet. And lastly, the preferred for this recipe, Spanish paprika. Ranging from sweet to spicy, many Spanish paprikas tend to have a hint of smoke from chilies being dried over oak wood fires.

This recipe is best paired with a light crisp and refreshing beer such as your favorite lager or pilsner.

Aji verde and Tostones (Fried plantains) are both recipes found on our website that consist mostly of our beautiful fresh produce that will greet you upon entering our market.

When it comes to any relationship, aligning on money matters is important as it plays a pivotal role in every aspect of a couple’s life.

Although talking about finances may not be the most fun conversation to have, there’s no doubt it’s an important one that can have long-term impact.

To make defining your relationship with money easier as a couple, BECU Lead Financial Educator Stacey Black suggests that you continue the conversation with this question:

What is your credit score? 

Another important part of your financial future includes awareness of each other’s credit situations. 

Do you or your significant other have bad credit? Are they carrying large sums of debt, or have they defaulted on loans? 

A poor credit history could drastically hinder your ability to plan ahead and achieve your goals, so conducting this type of “financial background check” ahead of time is crucial.

Credit reports contain information about your credit activity and current credit situation such as loan paying history and the status of your credit accounts, but it also contains other information that is important for you to review together. 

This includes:
  • Identifying information: periodically, it’s important to review to make sure your name and address are correct. If not, it could be an indication of fraud.
  • Account history: this is the biggest section on your credit report and has information about each of your credit accounts, including how you’ve paid
  • Public records: this section includes negative financial information like bankruptcies, lawsuit judgements and tax liens
  • Credit inquiries: this section lists everyone who’s accessed your credit report in the past two years
For those without credit, a secured credit card provides the opportunity to start building credit responsibly. A secured card requires you to make a security deposit, which is used as collateral in case of default on the loan and can help people feel more invested to make payments.

Of course, there are pros and cons of cosigning a loan or credit card for your significant other:
  • Pros: helping someone build good credit by cosigning a loan, for example, can change that person’s life for the better and have positive impacts on your relationship
  • Cons: 
    • As a cosigner, it’s your good credit that’s backing the loan. If your significant other misses a payment, that late payment history goes on your credit report.
    • When applying for credit cards or loans, credit card issuers and financial institutions look at what’s called your debt-to-income ratio to determine approval and the credit limit or loan amount for which you qualify. If you’re a cosigner on a large loan, that’s going to raise your debt-to-income ratio, causing some creditors to back away because they think you have too much debt.

McMahan License Agency in Mountlake Terrace closes permanently

According to an article by Teresa Wippel in MLTNews.com, McMahan License Agency in Mountlake Terrace closed its door on April 8, 2023.

A message from a reader alerted us: “McMahan License Agency closed in Terrace. I was shocked when I went to get tabs. That was our go to…”

We reached Pat McMahan, who has operated McMahan License Agency since 1997. McMahan was taking a well-deserved vacation but was happy to talk about the closure, which was effective April 7.

“Closing it down was the hardest decision I ever made,” McMahan said.

The bottom line, he said, is he wants to focus on the insurance business. He owns Plaza Insurance, located around the corner from the now-closed license agency. And, at age 61, he would like to have a more flexible schedule than the license agency allows.

Small Business Development Center opens April 26, 2023 at Shoreline Community College - first center in north King county

Join the Shoreline Chamber of Commerce and Shoreline Community College in welcoming the Small Business Development Center (SBDC) to Shoreline!

The official opening of this local office at Shoreline Community College is set for April 26 at 1:30pm.

Washington State Rep. Cindy Ryu will attend the ceremony, as will Shoreline Mayor Keith Scully. The ribbon and scissors for the event will be provided by the Shoreline Chamber of Commerce, which conducted the needs assessment and business outreach that ultimately led to the decision to locate an SBDC in Shoreline.

A ribbon-cutting ceremony is set for 1:30 to 3:30pm, Wednesday, April 26 at Shoreline Community College, 16101 Greenwood Ave N, Building 1400, Suite 1413, in Shoreline.

“The City of Shoreline is pleased to welcome the Washington SBDC to Shoreline,” said Shoreline Mayor Keith Scully. 
“As a City, we are lucky to have great partners like the Shoreline Chamber of Commerce, Shoreline Community College, and now the SBDC, who share our commitment to support small business startup, retention, and expansion, since, as we all know, small business is the backbone of the economy.”

The Shoreline center will join more than two dozen SBDC centers across the state where small business owners can access no-cost technical assistance to help them start, grow or buy/sell a business. 

SBDC business advisors can assist entrepreneurs with diverse challenges including preparing for a loan, creating a marketing plan, setting up business systems, managing cash flow and preparing for export.

Jennifer Shelton, an SBDC advisor with more than 20 years’ experience in small business technical assistance and lending, will be co-located with the Business Department at Shoreline Community College where she will meet with clients both in person and via Zoom.

“This is the first time an SBDC has been established to serve North King County and I am grateful for the support of Shoreline Community College as a trusted partner in small business growth,” said Shelton, who helped start an SBDC center in South King County and revitalize two SBDC centers in other parts of the state.

"I look forward to collaborating with the College and the business faculty there to support our business owners and to help drive local economic development.”

Funding for the SBDC office in Shoreline is being provided by the City of Shoreline, which is using federal funds from the American Rescue Plan Act (ARPA) designated for economic recovery.

Washington State University has been the statewide host of the Washington SBDC network since its inception in 1980. The program is sustained through a cooperative agreement between WSU and the U.S. Small Business Administration.

AG Ferguson wins $35 million and counting for Washingtonians from co-conspirators in chicken price-fixing case

Attorney General Bob Ferguson announced the recovery of $35 million and counting as a result of his lawsuit over price-fixing on chicken products. 

Fourteen of the 19 chicken producers named in the lawsuit paid $35 million to resolve claims against them. Ferguson’s office is working on a plan to distribute recoveries from this lawsuit to assist impacted Washingtonians.

Ferguson filed the lawsuit in King County Superior Court in October 2021. A trial against the remaining co-conspirators is scheduled for October 2024.

The conspiracy harmed an estimated 90 percent of Washingtonians, or approximately seven million individuals. Broiler chickens are used for everything from chicken breasts consumers purchase at the grocery store, to chicken nuggets and chicken sandwiches individuals buy at fast food restaurants. Consequently, the scheme impacted virtually everyone who consumes chicken products.

“If you bought chicken in the last several years, you paid more for that chicken than you should have because of the illegal conduct from these companies,” Ferguson said. 
“This is yet another milestone in our case against the companies involved in this conspiracy — but we are not done. They drove up the price of chicken and cheated hardworking Washingtonians. Antitrust laws protect consumers when company executives conspire to rig the system. I will hold all of the conspirators accountable.”

The Attorney General’s Office asserts all 19 chicken producers drove up the price of chicken since at least 2008, causing consumers to overpay by millions of dollars. The lawsuit asserts a widespread illegal conspiracy to inflate and manipulate prices, rig contract bids, illegally exchange information and coordinate industry supply reductions to maximize profits.

Two other states, Alaska and New Mexico, filed similar antitrust cases against national chicken producers. Washington is the first state to hold chicken production companies accountable for their roles in the price-fixing conspiracy.

The resolutions involve three of the country’s four largest chicken producers — Perdue Farms, Tyson Foods and Pilgrim’s Pride. In reaching these settlements, the Attorney General's Office considered all of the evidence in the case, including the defendants' liability, sales in Washington and the monetary harm caused by the conspiracy.

On its annual month of giving, the 46 Jersey Mike's sub shops in the Seattle area donated the proceeds of all sales on March 29, 2023 to Children's Hospital.

In the Seattle area alone, $366,293 was raised for Seattle Children’s Hospital.

Nationally the chain raised $21 million! A charity was chosen in each area of the country. A complete list of charities and money raised nationwide is available here by state.

Jersey Mike’s thanks its outstanding customers nationwide for their generous support during the 13th Annual Month of Giving this March which raised a record-breaking $21 million!

Under new ownership, the North City Bistro and Wine Shop continues the tradition of fine music and fine wine - and expands fine dining

North City Bistro and Wine Shop, a long-standing, renowned jazz nightclub in the North City neighborhood of Shoreline, is under new management. 

The previous owners, after withstanding the pandemic by selling cases of wine at the location, opted to retire and move to the south of France.

The Bistro has an extensive inventory of fine wine.

The new owners, Taylor and Leah Park, are Shoreline residents (Leah, a Shorewood grad) with three children. They look at this operation as a family business. 

The other day while I was visiting the club, two kids, Dylan and Giuliana, were folding napkins, while Liam sat in his stroller, wishing he could help. 

Taylor has been a chef at various establishments in the Seattle area, most recently as Executive Chef at both T-Mobile Park and Lumen Field, but his passion is gourmet foods, and he is very excited to share his newest creations at the Bistro.

The couple is in the process of enhancing the menu with new, exceptionally fine options of appetizers, small plates, salads, and entrees. Taylor and Lia have also added wine tasting events to the Bistro’s calendar, bringing in some of the area’s best wines for sampling with food options that pair well with the featured wines.

One of the most popular jazz combos in the area, Pearl Django is booked regularly at the Bistro.

Most importantly, the couple plans to continue the tradition of great music.
 

Many outstanding regional jazz musicians are excited that the Bistro will continue to support their musical community. The owners said that they are booked well into the future, but are always looking for new jazz musicians to play at their venue. 

Recently, this reporter and his wife joined friends for a lively sold-out performance by Pearl Django. We’d met this couple at a shared table while celebrating our wedding anniversary at a Pearl Django concert pre-pandemic. How nice that friends are made sharing a table and enjoying music together at the North City Bistro!

Music and dining are offered Wednesday- Saturday. 
  • Happy Hour is Thursday - Saturday from 4-6pm and on Wednesday, all day. 
  • The wine shop is open 12 - 8pm Wednesday .- Saturday.
  • Prepared meals are offered for delivery and are also available Wednesday - Saturday.

Shoreline is fortunate that the North City Bistro lives on, providing exceptional music, gourmet food and fine wine!

Update on Suni's

The Kyrkos family, owners of arson-destroyed Suni's restaurant in the North City Business district, are working their way through insurance claims and city permits, "trying to figure out what the next steps are."

We do plan on rebuilding. We are just trying to figure out everything that goes with it. There’s a lot of steps that have to be taken before we have set plans.  

They are still in shock and grief at the loss, but very thankful for the community support.

Shoreline is a special place with amazing people and we hope to see everyone again as soon as we can.

On the Menu at Le Petit Paquet: Change!

It’s been just over a year since Le Petit Paquet opened in the old Streetzeria Pizza location in Richmond Beach on Richmond Beach Road at 20th Ave NW. 

On the menu for year two? Change! And it’s all good.

Zephyr Paquette is the owner, a little dynamo package herself, just as her restaurant’s name implies. 

In the last year, she’s stayed true to the excellent pizza we have come to expect and added a bit more: fresh ingredients from local farmers. 

She dries her own herbs and continues to focus relentlessly on quality and tasty food.

But here’s what’s new.
Wednesday is Date Night! 

$50 and tip includes a pizza + salad + a bottle of wine. What??? That’s amazing. 

It’s not just any bottle of wine. Zephyr prides herself on carefully chosen wine, chosen with her best customers’ tastes in mind. 

You can buy a bottle to take home with you from the retail wall, too.

On Fridays, she releases the “Fresh Sheet.”
 The Friday night dinner menu goes beyond pizza to include Duck Confit or Halibut or Scallops, whatever is fresh at the moment. 

Her summer burrata has roasted peaches, pickled cherries and white balsamic reduction. Yum. Oh, and lemon bars. Yes, the lemon bars.

She’s wrapping up work on the outside patio. Dogs are not only welcome, but enthusiastically so. (Her pup, Ziggy, herded me around the restaurant for a while then sat down, allowing me to scratch his shoulder for 10 minutes. Sorry, I was distracted by this adorable dog.)

But wait, there’s more!
 

Zephyr is going to use the huge open space behind the restaurant to expand the eating area and show big screen movies over the summer. 

Buy dinner (or her new “lunch box” concept), bring a blanket, and watch a movie. 

That’s her plan and she hopes it is yours as well.

The day I visited, she was sanding and priming two gorgeous pieces of wood that will soon become tables. She plans a bar out back too.

But it’s the staff who she is proudest of right now. 

Every kitchen employee is 19 and under so she considers the workplace a teaching kitchen. 

She knows the backstory of each student which was impressive.

So if you haven’t been to Le Petit Paquet in a while, consider a visit before summer. 

Bring a date on Wednesday or your best dog anytime and definitely make a plan for a family or friends movie night with the big blow up screen between May and October.

Wild Horse building available for new tenant

A long, long, long time ago, maybe 18 years ago now, Richmond Beach had not one, but two, popular bars – the World Famous, 21+ Cabin Tavern and the kid-friendly Wild Horse Bar and Grill at 20th Ave NW and Richmond Beach road.
 
Some of us remember getting ice cream at the window outside the Wild Horse or celebrating the end of a Little League season with hot dogs inside or, for those old enough, playing a couple really smokey rounds of pool late into the night.

The Richmond Beach institution closed its doors for good in 2005 when King County voters passed the indoor smoking ban. In 2008,

I lived nearby and it was a hive of indoor construction activity.. but.. nothing. 2010 – more nothing. 2015 - more nothing. 2020 - more nothing. Then COVID and more nothing.

A new sign went up mid-March, it’s now “Available” and since then, there’s been non-stop talk about what might be happening next.

Turns out the local owner, who has had it for a few years now, wants to see a bit more life in Richmond Beach – yay! And they want to lease the space to a tenants or tenants for….??? The owner recognizes he needs to spend some money to make the place workable and he’s open to that.

Starbucks workers protest and strike

SEATTLE, WA – The day before Starbucks' annual shareholder meeting, and introduction of the new CEO after Howard Schultz resigned two weeks early, Starbucks workers protested in front of company headquarters in Seattle's SoDo neighborhood.

Workers at over 100 stores in Seattle, Los Angeles, Memphis, New York and more went on strike Wednesday calling on Schultz and other leaders to heed their calls for better working conditions and a voice on the job.

The company’s workers are demanding basic rights like livable wages with consistent scheduling, safe and respectful workplaces, and the right to organize free from fear and intimidation.

Wednesday’s day of action also served to welcome the company’s new chief executive, Laxman Narasimhan, and ask him to partner with its workers and union to build a company that lives up to its stated progressive values.

“Starbucks baristas like me are the ones who keep our stores running. We remember our customers’ regular orders, make the lattes, clean up spills, and are often the bright spot of our customers’ days. 
"We are the heart and soul of Starbucks,” said Sarah Pappin, a Seattle Starbucks worker and member of Starbucks Workers United. “Starbucks should respect our right to organize and meet us at the bargaining table. We are Starbucks, and we deserve better.”

At least one local store has unionized, the Gateway Plaza store at 185th and Aurora.

Seattle Children’s Hospital is joining forces with 46 Jersey Mike’s Subs in the Seattle-Tacoma area for the 13th Annual March “Month of Giving” campaign to support local charities. 

During the month of March, customers can make a donation at participating Jersey Mike’s restaurants.

The Month of Giving campaign will culminate with Jersey Mike’s “Day of Giving” on Wednesday, March 29, 2023 when local Jersey Mike’s restaurants will give 100 percent of the day’s sales – not just profit – to Seattle Children’s Hospital.

On Day of Giving, local Jersey Mike’s owners and operators throughout the country will donate their resources and every single dollar that comes in to more than 200 different charities including hospitals, youth organizations, food banks and more.

This March, Jersey Mike’s hopes to exceed last year’s record-breaking national fundraising total of $20 million and help local charities striving to fulfill their missions and make a difference.

“I would like to extend a personal invitation to you and your family to visit Jersey Mike’s Subs throughout the month of March, and especially on Day of Giving when 100 percent of sales – every penny – goes to help a great local cause,” said Peter Cancro, Jersey Mike’s founder and CEO, who started the company when he was only 17 years old.

Shoreline's April 25, 2023 Home Improvement Workshop (HIW) is almost full with just a few civil engineer, plans examiner, and zoning appointment slots available. 

There are still many appointment slots for the May 23rd event.

The HIW features individual 15 minute appointments for homeowners to review their plans with Shoreline planners.

Town and Country Markets launches new Private Label Milk, featuring cartons designed by employees

SEATTLE – February 23, 2023 – On Thursday, February 23, 2023 Town and Country (T/C) Markets showcased its new EveryDay Milk line, the second of several T/C EveryDay branded products it will debut this year. The company engaged its employees in the exciting launch of this new product and line, inviting them to help design the packaging by submitting original artwork.

T/C prompted its team for submissions with a simple design brief. It said, “We believe in the power of your creativity. And we want to create a way for others to appreciate it, too. So create something. Anything that can be printed on a package. Just make sure it’s inspired by the wonders of milk.”

Six selected entries won T.C Markets Gift Cards. These final winning selections reflected the criteria of “tie-in with milk, appropriateness of content, and overall awesomeness.” Each of the six winners will have their artwork featured on the packaging of T.C’s six new EveryDay milk varieties.

“We’re thrilled to connect our employees to this project, inviting everyone to tap into their creative spirit and have their artwork be shared in the markets,” said Susan Allen, director of Town / Country Markets. 
“Being a family business, it’s a priority for us to be involved in, and uplift our local communities, and we’re always looking for new ways to collaborate with the people that help make T/C so special. Plus, it’s been a lot of fun to see what everyone created.”

The six winners are:
